I just realized I posted this recipe to my Facebook and Instagram, but not here. This is one of my very favorite summer recipes! It comes together super quickly – the most time consuming part is cutting up the watermelon – and there’s no need to turn on the stove or oven. Depending on the size of your watermelon, it can make a ton of food and it only gets better if it sits in the fridge overnight, so it makes great leftovers. You know I’m all about that leftover life 🙂
1 watermelon – cut into chunks
1 cup of mint leaves – chopped
8 ounces of feta – crumbled
Zest and juice of two small or one large lime
Salt and sugar to taste (about 1/2 teaspoon depending on your feta and watermelon)
Combine all ingredients in a large bowl, mix well (but try not to smash the watermelon), and taste. Add salt or sugar (about 1/2 a teaspoon at a time) as needed to your taste. If you’re not serving it right away, just cover it and store it in the fridge. It only gets better if it chills overnight.
